Amanda Parker Obituary

Amanda Rose Parker, age 42, went to be with Jesus on Tuesday, November 18, 2025. She fought a long battle with diabetes and other illnesses.  She was born April 6, 1983, to Gary Eugene Parker and Iris Rose Singleton Parker. She was retired and lived on Freedom School Road in Mount Vernon. She was the granddaughter of the late Homer and Vivian Singleton of Red Hill, Kentucky and the late Henry and Hatti Parker of Lamero, Kentucky.

Those left to celebrate her life are her father, Gary Parker and her stepmother Judy, her mother Iris Singleton, her brother Sonny Parker and his wife Andrea, her sister Nacole Parker Smith and her husband Stacy, Her stepbrother: Jason Dillingham and his wife Tasha, and Chris Dillingham and his wife April, all of Mt. Vernon.

She loved and was very proud of her nieces and nephews: Markus Hupp-Smith and his wife Desiree, Jordan Smith, Kaylee Smith, Bella Smith, Jenna Beth Smith, Landon Dillingham, Averi Dillingham, River Dillingham and Ronan Dillingham. She also had three great nieces: Ella Smith, Ismira Hupp-Smith, and Aleia Hupp-Smith.  She loved telling people that the “weather man” was her nephew.

Amanda would want the best saved for last, which are her best friends Thomas and Lindsay Coffey and their two children, Easton Coffey and Emerson Coffey. Lindsay and Thomas were not just her best friends but they were also her family.

Amanda loved animals of all kinds. She currently has 9 indoor cats and has 1 outside cat – all of which were rescues. She carried cat food in the trunk of her Jeep just in case she saw an animal in need.

She will surely be missed by all who knew her. Family gatherings will never be the same – there will be no cell phones to hide and no one to fix a to-go plate and rush out before the dishes are done.  We love you, Amanda.
